Crunchy Baked Hot Honey Cauliflower

I turned a favorite chicken dinner that’s loved by all into an even better vegetarian appetizer/dinner! Cornflake-crusted cauliflower baked up on a sheet pan until crispy and delicious. Each cauliflower “wing” is tossed in my sweet honey sauce with the perfect combination of spices and sea salt. Then serve these little delicacies with a homemade creamy sauce. Together they make a delicious appetizer to serve up to family and friends.

Crispy Cheese Sweet Potato Skins

Crispy Cheesy Sweet Potato Skins, plus all the toppings – because loaded potato skins are the only way to go. Baked sweet potato skins with a smoky chipotle chili spice mix and lots of parmesan and cheddar cheese layered on top. Add plenty of homemade bacon bits and then all your favorite toppings! These potato skins come together easily and are one of my all-time favourite dishes.

Crispy Honey Ginger Salmon Bowl

Made with flavourful ginger and cooked in a salty-spicy butter sauce until crispy, this recipe is one of my absolute favourites. The salmon is cooked until caramelized around the edges then added to bowls of coconut rice. It’s served with a fresh bright mango salsa with candied jalapeños for a balance of spicy, sweet, and savory flavor. Altogether, it’s so delicious. And the best news – it takes just minutes to prepare! Click here for the recipe.

Banh Mi Rice Bowls

This Banh Mi Rice Bowl is full of fresh flavours and made so simply. The ground chicken, or pork, is cooked in a sweet soy chili sauce until caramelized around the edges. It’s then added to bowls of lemongrass rice. A fresh, bright, cucumber herb salad with chunks of avocado is spooned overtop along with quickly pickled carrots. There’s spicy mayo and extra sauce too. It’s a very yummy balance of spicy, sweet, and savoury flavours. Click here for the recipe.

Better than the bakery Chocolate Chip Espresso Yogurt Cake

Whole wheat vanilla cake made with Greek yogurt and espresso powder, then swirled with plenty of sweet, rich dark chocolate chunks. This loaf-style cake is no fuss, whole grain, low sugar, and absolutely delicious! Finish the cake with a simple vanilla icing, then lots of chocolate “sprinkles” on top. It’s simpler to make than you’d think (just 1 bowl) and a wonderful cake to enjoy anytime. Much better than the bakery! Click here for the recipe.

I hope you enjoy these delicious recipes over the weekend!
