First up we have the perfect breakfast – a parmesan and pesto egg in a bagel. Crispy parmesan cheese, basil pesto, seeded bagels, and perfectly cooked sunny side up eggs. Serve yours up with avocado and herbs and you’ll have a great breakfast to enjoy any day of the week.

Feeling snarky? Try this crispy roasted cauliflower hummus. Store-bought hummus (the easy shortcut no one needs to know about) topped with chili seasoned roasted cauliflower and spicy garlic herb oil. It’s the simplest to throw together, but looks super fancy and tastes even better.

This colourful harvest Honeycrisp apple and feta salad is my go-to for those busy work days. Spicy baby arugula, Honeycrisp apples, juicy pomegranates, candied nuts, and crispy prosciutto. All tossed with an apple cider vinaigrette – a must try!

Another great option for lunch or dinner if you’d like is this sweet potato kale salad with creamy honey mustard dressing is anything but boring. Sweet potatoes and chickpeas tossed with a mix of spices, then roasted until lightly charred, crispy, and delicious. Everything is tossed together with a creamy, honey mustard dressing, kale, herbs, and avocado. This salad is easy to throw together, colourful, healthy, and filling.

Next up we have weeknight Thai chicken meatball Khao Soi. This northern Thai inspired noodle soup is the simplest weeknight dinner. Made with flavorful Thai curry paste, coconut milk, and plenty of fresh herbs and lime juice. Toss in seared gingery chicken meatballs and plenty of delicious egg noodles, it’s hard to beat the easy Thai inspired soup.

If you’re looking for a bit more of a filling dinner option, try this honey garlic salmon soba noodle bowl. Best for nights when you’re craving a really delicious noodle bowl, but also looking for a cozy, healthy dinner. Caramelized salmon in a sweet and tangy honey garlic sauce with soy sauce and ginger. Served over creamy tahini soba noodles with roasted broccoli and brussels sprouts.
